Baked Brie

What to do when winter doesn’t seem to want to give it up?  Load your house with pretty blooming plants and then sit back and enjoy this amazing treat.  Just 3 little ingredients when combined go from great to amazing.  This is sinfully delicious and so simple to prepare.  The jalapeno adds just a hint of heat, if you are looking for a bit more heat, add 2 jalapenos. This was perfect served on thin slices of a French baguette.  Sadly I didn’t take a picture of the finished product, one taste and I just wanted to keep eating.  This is really yummy!


8 ounces brie (a round or a wedge)

1/3 cup apricot or peach preserves

1 medium jalapeno pepper, seeded and finely diced

Thinly sliced French baguette or crackers

Preheat the oven to 400 degrees F.  Mix the apricot preserves and jalapeno together in a small bowl.  Slice the brie in half horizontally and spread ½ the apricot mixture over the bottom half of the brie, place the top of the brie over the bottom, think sandwich making.  Place the cheese on an oven proof plate and top with the remaining apricot mixture and place in the oven for about 10 minutes.  Spread onto crackers or bread and enjoy!
