2 ingredient pancakes

Yesterday morning for breakfast I made some pancakes.  But they were a little different than your average pancake.  I have seen these on other blogs before, so I didn’t come up with them, but I finally decided to give them a try.

The reason they are different than your average pancake is because they only contain two ingredients.  They are are also gluten and grain free.

The two ingredients?  Eggs and bananas.  2 eggs to one banana.

Just take one very ripe banana and mash it up with a fork.   Then add two eggs and stir or whisk to combine.  You really only need these two ingredients, but I also added cinnamon and a dash of vanilla.

Heat a pan-and make sure it gets very hot before adding the batter.  Make sure the pan is greased, add the batter and it should take about the same time to cook as a normal pancake.

The batter made two really big pancakes which I ate with a spoonful of almond butter on top.

These are really, really good!  Full of protein and very healthy and filling.   Next time you are in the mood for pancakes, give them a try!
