Veggie Lasagna

This was a quick and easy dinner to throw together when I got home from Northern Michigan Sunday night.  It required a bit of time in the oven but the actual assembly was quick.  It also gave me a chance to finish off the last of the veggies from my sisters garden.  I used less pasta than typical lasagna and substituted eggplant and squash slices instead.  This made for tasty lasagna and worked well because I only had a half box of  no boil lasagna noodles.  I really like using  no boil noodles, they save an extra step and it also means one less dirty pan.  Use whatever pasta sauce you like, I used some homemade sauce that I made with tomatoes from my sister but a jar from the grocery would work just as well.

8 no boil lasagna noodles

4 cups spaghetti sauce

1 cup low-fat or fat free ricotta cheese

1 cup low-fat or fat free cottage cheese

1 1/4 cup low-fat mozzarella cheese (divided)

1 tablespoon dried oregano

1 medium eggplant, peeled and thinly sliced

3 or 4 small zucchini or yellow squash  cut in thin lengthwise strips

2 cups frozen spinach, thawed with liquid squeezed out once it is thawed

 

Preheat oven to 375 degrees F.  In small mixing bowl, combine ricotta cheese, cottage cheese, 1 cup of the mozzarella cheese and oregano. Spray a 13 by 9 inch glass pan with non stick spray.  Cover the bottom of the pan with about 1 cup of the spaghetti sauce.  Top sauce with 4 lasagna noodles to roughly cover the pan.  Top with about one third of the eggplant slices and half of cheese mixture.  Cover with another cup of spaghetti sauce.  Top sauce with another layer of noodles.  Add squash, spinach and another third of the eggplant.  Top with remaining cheese mixture.  Cover with remaining eggplant slices.  Pour remaining spaghetti sauce over eggplant and sprinkle with reserved mozzarella cheese. Place in oven for 60 minutes uncovered. Remove from oven and allow to cool for about 10 to 15 minutes before serving.

Here are a few pictures from the weekend, fall was in full swing.  We were able to get in one last round of golf at Birchwood. The pond seemed much prettier before my golf ball landed in it!  It’s hard to beat Harbor Springs in the the fall!
