Re-made Recipes and Pinterest Ideas

Since my mom and I were recipe twins earlier in the week and both made gazpacho, I don’t have a real recipe but I have thrown together a few meals inspired by other recipes that I thought were worth sharing:

Usually when I make a frittata, I just throw in whatever veggies that I have.  But for some reason, I never really thought of just using tomatoes.  I saw a recipe for a tomato frittata in this month’s Bon Appetit and decided to try it–kind of, I didn’t have any parm cheese.  And I added some basil. So I was more just inspired by the recipe.  Even though this recipe is super simple, the addition of fresh summer tomatoes make it a delicious one

I saw a recipe for Charred Corn Tacos with Zucchini and Radish slaw on Smitten Kitchen.  I didn’t have tortillas, I thought I would use the ingredients in a salad.  I already had both radishes and zucchini and decided to make the slaw.   So, I combined radishes and zucchini and added lime juice to that mixture.  I combined the slaw with corn (sliced straight off the cob), black beans, tomato, avocado, lettuce and chicken.   For the dressing, I used a mix of barbeque sauce and greek yogurt.   I ate this most days this week because it was so good!  And I used to be a radish hater–looks like I’m coming around.

This post made me laugh today because sometimes Pinterest really does have a way of making me feel sub-par.  And it has a way of making me want to buy clothes/jewelry, be craftier, redo my apartment and do more DIY stuff.  But it has given me some good ideas, so I’ll keep it.
