I am going to make this a quick one because I am exhausted and have an early Monday morning. I don’t have too much to recap from my weekend. I actually made this recipe a few weeks ago and was surprised that neither my mom or I had posted it by now. We used to have this meal a lot on nights when we needed a quick dinner. I remember having it a lot on Sunday nights when we had just gotten back from somewhere and we didn’t have a whole lot in the fridge. It is pretty easy because normally you have most of the ingredients on hand and can throw it together.
I actually always thought that they were called ‘boltanas’ until about 10 minutes ago when I googled the name and nothing came up. Then I realized they are called Botanas. Oops! Anyways, regardless of what you call them…they are basically nachos but with a little more substance.
Growing up, we always made them vegetarian, but this time I made them with ground beef. You can do either the way. The beauty is you can add whatever you have. If you want to make them vegetarian, you will need: Tortilla chips, refried beans, shredded cheese, tomato, avocado and olives (0ptional). If you want to add meat, I used lean ground beef and taco seasoning. Also salsa and greek yogurt/sour cream for the side.
Start by pouring chips onto a baking sheet. I think we always just used the whole bag of chips.
Heat the refried beans first before adding them, you are just going to broil the whole mess so the beans will not get warm enough on their own.
Add the meat, tomato and avocado and olives. I know some people don’t like the taste of cooked avocado, so you could always add it after. I actually like it though so I always add it before. Then add (lots) of shredded cheese on top
Broil on high until cheese is melted and starting to brown. Then cut the tray into quarters and serve with salsa and sour cream!
Ingredient amounts to serve approx 4 are:
1 bag chips
1 can refried beans
1/2 pound ground beef
1 T taco seasoning
2-3 tomatoes (depending on size)
Salsa and Sour cream to taste
Now that I had these, I know why they were always a quick weeknight staple! They are so easy to make and taste great!
