How to love Cauliflower

I really enjoy cauliflower raw and cooked as well.   Some enjoy one over the other.  If you only like your cauliflower raw, this recipe will make you believe in the beauty of cauliflower when it has been hit by heat (cooked).  This is so simple and so good and don’t forget this looks good too (that can be important).  I had a pretty small head of cauliflower and remembered I had tried roasting cauliflower a couple of years ago and decided I should revisit this idea.  It was so good, I had a hard time paying attention to the rest of the meal, even Craig was pretty excited about this.

1 head of cauliflower, sliced lengthwise into ½ inch slices

1 tablespoon olive oil

Salt and pepper to taste

Preheat oven to 400 degrees F.   Spray large baking sheet with nonstick cooking spray. Gently toss sliced cauliflower with olive oil.  Spread sliced cauliflower onto baking sheet and sprinkle with salt and pepper.  Roast in oven for 30 minutes or until the edges of the cauliflower are beginning to brown.  Remove from oven and enjoy.  This is great served hot or at room temperature.  Even if you are not crazy for cauliflower, get ready to enjoy, cauliflower tastes so much better when it’s roasted.  It takes on a lovely sweetness that is so unique to roasting, you won’t even recognize it as cauliflower.  Enjoy!
