Wendy’s…I mean Mindy’s Chili

This morning I decided to try a yoga class at my gym.  I usually take yoga at a studio but the gym right by my work actually offers hot yoga, so I thought I should give it a shot to see if I liked the classes enough to quit paying for a monthly membership (not that I don’t want to, it’s just expensive).

The class is a ‘heated’ but not ‘hot’ vinyasa class-so I figured it would be really similar to the power yoga classes that I go to.  I walked in the room and the first thing I noticed was that all the windows were totally fogged–which means the humidity was turned up really high.  I am starting to realize that I can stand the heat, but not the humidity as much because it makes me feel like I can’t breathe (like working out in a steam room would feel basically).   When the teacher walked in, she mentioned how it seemed much hotter than usual, but she doesn’t control the heat so there was nothing she could do.  Great!  Luckily, she was a good enough teacher to realize that everyone was struggling about half way through and slowed things down a bit–I think everyone was pretty grateful for that.  All in all, I did like the class and I felt like I got a pretty good workout.  I’m not sure I’ll cancel my membership though since at this point they only offer hot yoga a few times per week.   I was already getting to work later than I usually do so I really rushed through showering and getting ready and realized as I was getting ready to leave the gym that my face was still BRIGHT red.   I took this picture at work over an hour after class ended:

I don’t even think this pic does it justice.  I was trying to avoid putting makeup on until I didn’t look like a tomato but it took too long and I couldn’t walk around the office with a bright red face + no makeup any longer.  So I took a picture to put on the internet instead…naturally.  That strategic lighting really gives me an angelic look, huh?

On to soup week!  I know I just posted a white chicken chili recipe on Monday, but I’m going to post a regular chili recipe today.   This recipe is a copy off of Wendy’s chili.  I really like Wendy’s chili and used to always order taco salads from Wendy’s when we would go (well on days I wasn’t ordering a #1 w/ cheese, no pickles).  I love taco salad.  I feel like I could probably eat it every day.  I was thinking about how a taco salad would be a great lunch because it is 1. healthy (or it can be at least) 2. really filling 3. tasty

So I googled to find a copy off of Wendy’s chili.  I found this one and altered it a bit.   I’m going to call it Mindy’s chili so it’s obvious but not too obvious that it is a total copy off of Wendy’s.   Has anyone seen the commercial for ‘Bob’s’ shoes which are a total copy off of Tom’s?  I was dying laughing after I watched it…it is one thing to copy the shoes but seriously?!  Bob’s is the best you could do for a name?   So that’s what I’m doing here…

Mindy’s Chili 

2 pounds of lean ground beef (I used one with 7% fat)

1 28 ounce can whole tomatoes (and sauce too)

1 6 ounce can tomato paste

2 cans kidney beans (with liquid)

1 cup onion

1 can green chilies

1/2 cup celery

2-3 chopped tomatoes–or you could add another can of diced tomatoes

2 t cumin

2-3 T chili powder (I used 3 but it definitely had a slow burn that way)

1 t pepper

3 t salt

2 cups water or use broth in place of water and omit salt

Directions:  Cook the beef and onion together in the pan.  Drain the fat once the meat is cooked and then add everything else.  Simmer over low heat for 2-3 hours.

Serve as a soup, topped with cheese and sour cream or it is thick enough to use in a taco salad.  I made my taco salad using lots of lettuce, tomato, celery, avocado, yellow pepper and a few crushed Food Should Taste Good chips.   You can use whatever you like!  Cheese would be good too, I just didn’t have any.

It really does taste a lot like Wendy’s.  I brought it for lunch, heated it up and poured it over my salad and it was such a delicious and filling lunch.  If you want to keep it healthy, just remember not to go overboard on the cheese, chips or sour cream.  If you really like sour cream, try using greek yogurt.  It tastes really similar and is really low in calories plus has a ton of protein.

I’m experimenting in the kitchen with a new recipe and I reallyy hope it turns out, I think it’s going to be a great one so I can’t wait to share it!
