Veggie appetizer sandwiches

 

This is a fast and easy appetizer and since it’s Friday, it will be great for a little TGIF celebration.  I have made these lots of times and they always disappear at parties.  Even people that don’t like eggplant enjoy these. 

5 oz goat cheese

1 medium eggplant, thinly sliced

2 small zucchini, sliced lengthwise

2 medium bell peppers, quartered

¼ cup good quality balsalmic vinegar

2 tablespoons olive oil

Large focaccia bread, halved

Preheat oven to 325.  Toss vegetables with oil and vinegar and place on large baking sheet.  Roast vegetables for 20 minutes.  Spread goat cheese on each half of bread and layer vegetables on bottom of focaccia.  Put top of bread onto vegetable half and gently pat in place.   Cover with foil and bake for 15 minutes.  Slice into wedges and enjoy
