I realized I have been forgetting to sign my posts recently! Sorry about that, still trying to get into the habit. But they have all been me since around Thursday.
I was not excited to head into another work week after the glorious weather we had on Sunday. But I did head into work today with a little joy knowing that I have a half day on Friday! My company does this thing where every other week we can work in an extra 3.5-4 hours during the week (I usually take a shorter or no lunch and get there earlier and then have a half day on Friday. It helps to beat the insane Friday rush hour traffic (1.5 hours and up ugh).
This day turned out to be a much more eventful Monday than I had planned. When I turned on my car to drive to work, I noticed that it felt a little off. The car seemed to be like pulsing or shaking on the floor and it got a lot worse when I braked which didn’t seem good. Since the engine temp seemed ok and no warning lights were flashing at me, I figured it was fine. Well, I was wrong. As soon as I got on the freeway, the engine light came on which caused me to panic and pull over to the shoulder. I actually kept my cool more than I normally do in these types of situations and called roadside assistance and my car’s service dept to see if it was ok for me to drive back to my apartment and have it towed from there.
They picked it up and it turns out, as you might have guessed from the title of this post, that the rats do indeed have it out for me. You might remember back in Januray when a rat built a nest on my car engine. Well they came back and chewed through a bunch of wires and I had to get an ignition coil replaced (or something, that sounds right, right?). Thank god my car is still under warranty. I seriously never thought I would need to be dealing with rat drama more than once in my life. Anyone have any good suggestions for me?? I’m parking on the street for now because I’m scared to go back to my spot.
Since I ended up working from home today since I was without a car, I decided to do a little baking. I saw that Gina from The Fitnessista had posted an awesome recipe for healthy donuts. Well I don’t have a donut pan (although I am now in the market for one), and I also didn’t have all of the ingredients that she used, so I adapted the recipe slightly (which I think was originally adapted from 101 Cookbooks)
Choco Banana Cookies
Adapted from The Fitnessista
1 very ripe banana, mashed with a fork
1 cup rolled oats
1/2 cup almond meal
1 t vanilla
Dash (about 1/2 t) baking powder
1 t flax (+ water to make flax egg)
1/2 cup chocolate chips (but really just however many you want)
There was no real science to this, I just mashed the banana first with a fork and then added everything else. I am not a very good baker in that I don’t usually mix the wet ingredients and dry ingredients separately. I wasn’t sure if these would turn out well since I cut out a lot of stuff but I figured I would give it a try. I baked at 350 for about 15 minutes. Wow, they were really good. Almost like a banana bread taste but also super chocolately. The banana kept the cookies really moist (hate the word but it’s true) and they were so delicious that I may or may not have eaten 4 within 5 minutes of taking them out of the oven. How is that for an awesome meat free Monday recipe? I guess it doesn’t really count since it’s a cookie but hey, sometimes you just need a cookie or two.
After my rat fiasco, I went for a run in shorts and a tank top! It is so nice out again today!
My roommate and I have plans to grill some veggies, brats and tofu (for me) off of our neighbors grill. We live above 4 college boys which is not the funnest as you might imagine (I am constantly the grandma asking them to be quiet and turn their music down), but they just got a grill so they are redeeming themselves in my book.
