Strawberry Spinach Salad

This is a recipe for “I’m wishing for spring-strawberry spinach salad”.  Are you getting a bit tired of the cold and the snow?  I usually enjoy snow but we have had a pretty big dose of it this winter in Michigan and I’m beginning to wish for warmer weather and spring.  This salad makes me think of spring, so I made it tonight so that I could put winter out of my mind.  I’ve made it for Easter dinner, the colors are very nice and by using pureed strawberries in the salad dressing, the fat is cut but the flavor definitely isn’t.  I really like it, I hope you will too.  Even Craig, who objects to fruit in the main course, had three servings of this tonight.

Strawberry Spinach Salad


6 cups baby spinach

1 cup sliced strawberries

1 medium apple, diced

1 avocado, sliced

¼ cup slivered almonds

1/3 cup crumbled feta cheese

Strawberry dressing:

1 tablespoon olive oil

2 tablespoons balsalmic vinegar

1 cup sliced strawberries

Puree salad dressing ingredients together in blender.  In large bowl, mix together spinach, sliced strawberries, apple, almonds, avocado and feta cheese.  Toss with salad dressing.
