It’s early summer and that means strawberry season in
Michigan. There is nothing better than
local Michigan strawberries. I bought 2
quarts and I wasn’t sure what I would make.
After spending the day in the yard planting and pulling weeds, I didn’t
have a lot of energy left, so made the easiest thing that came to mind and it
was so delicious. I used a single use
package of Bisquick and added the ½ cup of water that the package
suggested. It makes 6 shortcakes. I added 1 tablespoon of
sugar to the mix and used an additional teaspoon of sugar, divided to sprinkle
over the shortcakes. Bake as directed on
the package, 450 degrees F for 8 minutes.
1 quart strawberries, rinsed, and sliced
1 tablespoon sugar
Canned whipped cream
Slice strawberries and toss with sugar. Allow berries to sit for an hour to allow the
sugar to draw juice from the berries.
Slice shortcakes in half, fill center of shortcake with berries and juice
from berries. Place a few berries on top
of shortcake and garnish with whipped cream.
