So, what happened to the day yesterday? I should have posted and I must have been lost in a fog or blog or maybe I was out shoveling snow once again. Will winter ever end in Michigan? Finally I am back on the job with something that just requires assembly, not much cooking is needed.
Want something that can be thrown together in a flash? Here’s a meal that could be eaten any time of day. Do you get home from work and the effort of making a meal seems like too much effort? When that happens I try to have a list of quick meals that are really more assembling than cooking.
Here’s an example:
I try to have a package of tostadas on hand.
( If you don’t, spray corn tortillas on both sides with PAM, toss onto a cookie sheet and bake in a 300 degree oven and after 10 to 15 minutes, flip the tortillas over until they are crisp but not browned.)
Open a can of black beans, rinse and drain in a small colander, toss the beans in batches onto a paper towel to dry them a bit. Cover each tortilla with beans and top with finely shredded cheese of your choice. Yesterday when I made these, I put a few slices of red pepper that I had on hand on top of each. Bake on a cookie sheet in 300 degree oven until cheese is melted. Top each with a fried or poached egg and serve with a spoon of salsa and sour cream or guacamole. In the summer I like to slice a fresh tomato to serve with a meal like this, in the dead of winter in Michigan, tomatoes are not so exciting, so a few slices of an orange or apple might be nice.
