Finally fresh local summer vegetables are here! This is a recipe to celebrate some of the veggies I found at the farmers market in Port Austin. I have been hunting and hunting for local tomatoes and until this weekend I haven’t been able to put my hands on any. The prices were pretty steep so my guess is what I found were the first of the season. But, they were worth waiting for. Yum, is there anything better than a locally grown tomato? I don’t think there is.
This is a great recipe to use up left over corn and green beans from the day before.
1 medium tomato, diced
3 small ears of corn, cooked and kernels removed from cob, about 1 ½ cups
1/3 cup diced onion
1 cup cooked green beans, chopped into ½ inch pieces
½ cup basil, chopped
2 tablespoons balsamic vinegar
1 tablespoon olive oil
Salt to taste
