This week is flying by with not enough time at all. How is everyone else’s week going? Missing 2 days of work means I’m insanely busy but it makes the week go by fast at least! Coming back to 30 degree weather from 70′s was a bit of a shock…I miss Arizona!
For my first Thanksgiving recipe, I decided to make pureed sweet potatoes because it is one of my favorites. We usually have sweet potatoes at Thanksgiving but I’m not a huge fan of the traditional sweet potato w/ marshmallows (don’t hate me). This version is savory but is still different enough from regular mashed potatoes that I think there is room for both. And it is super duper easy and also pretty healthy. So if you are looking for a recipe to bring to Thanksgiving try this one!
Rosemary and Thyme Pureed Sweet Potatoes
serves 8 as a side
2 super huge sweet potatoes (or 4 regular-large)
1/2 cup milk of choice (I used unsweetened coconut milk)
1/8 cup fresh rosemary
2 t dried thyme (or 2 T fresh which would probably be better)
1 clove garlic
1/2-1 t salt (to taste)
1 t pepper
1 T butter (optional)
Directions: Preheat oven to 450. Poke a few holes in sweet potatoes with a fork and bake potatoes for 45-50 minutes or until potatoes are cooked all the way through (pierce with a fork to tell).
Chop the garlic and the rosemary (and thyme if using fresh) and pour into bowl of food processor. The reason I say to chop is the food processor doesn’t totally cut up and it is a little too much if you don’t chop beforehand. Add the salt, pepper, milk and (melted) butter if using. Chop the sweet potato into pieces–I left the skin on, but if you don’t want to keep the skin on, it will come off really easily after it is cooked. Pulse everything for about a minute or until fully combined. If you don’t have a food processor, you can definitely just mash these like you would normal potatoes, but I really like the puree when it comes to sweet potatoes. I don’t really know why since I like mashed potatoes to have a little bit more texture. Anyways, if you haven’t tried more of a puree before, definitely try it! The herbs add so much flavor and it doesn’t taste like eating baby food, I promise

Not exactly sure what is going on in the following picture but there are about 10 of the same….I figured one was enough, I think you will see why..
