Perfect Protein Salad

Perfect protein salad is quick tasty and very nutritious
without being too heavy in the calorie department.  You can throw this together is just a few
minutes and it holds together nicely for quite a few days, a perfect salad to
make on Monday and take to work for lunch all week long and it is the kind of
salad you don’t tire of too quickly.  There
are quite a few takes on this salad and I would have included red or green
diced peppers into the mix but I was surprised to find I didn’t have a single
one in the veggie drawer.

16 ounce can garbanzo beans, rinsed and drained

1 English cucumber, peeled and diced

1 cup shredded carrots

1 cup cooked and drained lentils

1 cup diced onions

½ cup chopped fresh parsley

1 clove garlic, finely chopped

16 oz container low fat cottage cheese

3 tablespoons red wine vinegar

2 ½ teaspoons dried dill

1 teaspoon sea salt

¼ teaspoon black pepper

Add all ingredients to large mixing bowl, toss and enjoy
