Lowfat Zucchini Brownies

I have been planning  to try making low fat zucchini brownies for some time and now is the perfect time because it’s zucchini season.  There is an abundance of locally grown zucchini and yesterday I got my hands on some. I am not a baker as Katie will attest to (she will tell you she has had
to do all her own baking since was 9 or 10 years old which is not exactly true).   When she whined to my sister years ago that I didn’t bake like a good mother should, Sharon offered to call child protective services but luckily Katie didn’t take her up on it. I’m not big on exact measurements and more exactness is required with baking than with cooking in general so when I came up with this recipe, I wasn’t convinced it would work.  The mixture was much thinner when a poured them into the pan than a more traditional brownie mix but don’t be put off by that.  What a surprise, these are really great.  They are so good that I might even buy zucchini in the winter when it’s pricier to make these.  You have to try them!  They are everything that a good brownie should be; plenty of chocolate flavor, a little chewy and they are nice and moist.

2 cups grated zucchini

2 eggs

¼ cup olive oil

¼ cup low fat yogurt

2 teaspoons vanilla

½ teaspoon baking soda

1/3 cup cocoa powder

½ cup packed brown sugar

½ cup sugar

1 ½ cups flour

Preheat oven to 375 degrees F.  Combine eggs, oil, yogurt and vanilla in mixing bowl.  When thoroughly combined, mix in zucchini.  Next add salt, baking soda, sugars and cocoa and mix until evenly combined.  Finally, mix in flour until well combined.  Spray an 11” x 8” glass baking
pan with non-stick cooking spray.   Pour batter into pan and if necessary, spread until even with a spatula.  Bake for 18 to 20 minutes, until the edges of the brownies are beginning to pull away from the pan and the center is firm.   Karen

  1. I am very excited to try these. Yes I am the baker…..Poor Katie she was much like an indentured servant as far as the baking was concerned! I would never call CPS although…I considered it…haha

  2. I’m proud of you for making these mom—I’m going to have to try them! At least I can count on you Aunt Sharon for some baked goods :)

  3. Just finally tried these brownies! Love them. Even Dan who is apposed to anything green loves them. Of course he does not know about the zucchini in them. Love you both!!
