Light n Tasty!!!


Fun fact of the day: Drinking ice water actually burns more calories than drinking room temperature water because your body has to work harder to warm the water up!  I just read that in Women’s Health and wanted to share.  I like ice cold water so much better anyways, so this works out for me. Next time you are thinking of skimping on ice, don’t do it!

On to my day.  I woke up feeling prettyyy happy.  Do you want to know why?  I knew that I would be having a giant bowl of Light n Tasty for breakfast!  Light N Tasty is my all time favorite cereal from Australia.  I used to eat it at least once I day when I studied abroad in Australia.  Once I got back, I tried to find it online but never could.  I didn’t really want to pay a ridiculous amount for shipping, so I have only had it once since then when my roomie from Australia who also lives in Chicago gave me half of a box her friend brought her.  She is pretty awesome like that :) .

So how did I get it this time?  My friend Amy (my old babysitter actually) is married to an Australian, Sean (they met while she was studying abroad there!).  Sean is from Wollongong (south of Sydney) so they go back to visit pretty often.  They were nice enough to bring me back not one, but two boxes of Light n Tasty.  This honestly made my week, maybe my month.  That is how good this cereal is.  I can eat it for breakfast, lunch and dinner.  One of my good friends used to make fun of how much I ate it and he would always ask me if I was on the cereal diet.
Beyond my cereal driven happiness, I DO have a recipe for you.  I don’t want to just brag about this awesome cereal that is impossible to get, that wouldn’t be very nice!  In the honor of cereal/breakfast, I am going to share a recipe that I have tweaked quite a few times and I think I finally got right!  Oatcakes!!
You might remember when my mom and I bought Oatcakes at Bloomingfoods.  I have been trying to recreate these for awhile.  I made them first in a muffin tin and they turned out okay but more like cookies and kind of dry.   Then thought I would try to bake in a ramekin to get the round cake part right.  These were better, but I added egg and for some reason thought it made it a little too gooey, for lack of a better word.  So, third time I tried without egg and made just like I would overnight oats, but baked.  This is by far the closest I have come, and even though it doesn’t taste exactly the same, these were really good and would make a delicious and healthy breakfast or snack.
Chocolate Chip Oatcakes

This is for one ramekin, if you want to make more than one, just double, triple, etc and pour into separate ramekins after mixing all ingredients together
1/3 cup oats
1/3 cup milk (I used Trader Joes vanilla soymilk)
2 T applesauce
Dash of salt
1/4 t vanilla
A little bit of cinammon–I added probably a teaspoon but you can add more/less depending on how cinammony you want it
2-3 T chocolate chips
Preheat oven to 375.  Mix all ingredients together in a bowl.  Spray ramekin with cooking spray and pour mixture in.  Bake for 30 minutes.  Once it cools a little, use a knife around outer edge to remove the oatcake.
Feel free to try variations on this–if you wanted to make it really chocolatey, you could add a few teaspoons of cocoa powder.  You could add nuts and dried fruit instead of chocolate chips to make more of a breakfast cake.  I think I will try one with ginger pieces and almonds next.  The possibilities are endless here! I also like that you can make just one if you want, or a bunch…it is just as easy to make a smaller or larger batch.
And with that, I’m off to make a few batches of green cookies for my work potluck tomorrow (the batch I made over the weekend were a test run). Recipe to come soon!
