I say portobello, you say portabella

Hello everyone!

Happy Tuesday!  I made it back on the megabus last night.  I actually started crying when I got on the bus because I get sad when I leave my family after seeing them.   Sad but true.   It didn’t take long for me to be cheered up by my dinner… a burger salad!

Does a burger salad sound weird?  It is just a burger in a bowl…a (leftover) hamburger with lettuce, tomato (bad!), celery, cucumber, black olives, feta cheese and topped with ketchup, mustard and relish.   Just think of it is a burger without a bun!  You could do all sorts of combos.  I actually had the one you see above for lunch and then loved it so much I made it into dinner.

Since I’m showing you two meals from yesterday, I might as well show you all three!  This was my awesome breakfast:

I had to show you a picture because I loved this breakfast so much!  Trader Joe’s high fiber cereal, tons of raspberries,  a spoonful of sunflower butter, trail mix (cashews, raisins, m&ms!, almonds) and milk!  It made me feel kinda sick I think from wheat+dairy which I have not been eating.  But totally worth it!

Anyways, I got sidetracked…back to my trip home.  Luckily, the bus wasn’t too crowded and I got my own seat which never ever happens.  More people got on in Ann Arbor but I made sure to not make eye contact so I didn’t have to give up my second seat :) .   I read Harry Potter and slept and the trip went by quickly.   Speaking of Harry Potter…did you guys see the last movie?  My dad, brother and I saw it on Sunday and I LOVED it.   I feel pretty sad that it was the last movie, but definitely thought it was great.  My dad, Andrew and I have seen all the movies together.  It always worked out that we were going to be in the same place within about a month or so of the movie coming out so it became a tradition.  My mom came with us to the first movie but she fell asleep so she hasn’t been invited back.  Take that Mom!  Don’t take that as a sign of how good the movies are…she falls asleep during almost every movie, sometimes even during the opening credits.

I got a really bad headache towards the end of the ride which turned into a horrible migraine in the night and this morning I could not even walk standing up so I had to call in sick to work.  It was one of the worst headaches I have had in a long time, and I have no clue what triggered it!  I couldn’t even get up until mid day, but it worked out okay because once I could get up, I had time to clean, unpack and do some grocery shopping.

Remember that recipe that I told you guys about and said it still needed some tweaking?  Well, I made a version today and it was really good, so it is ready for sharing.  I might still keep tweaking it, but this one is really good and definitely worth making.  What is it?  Stuffed Portobello’s!

Spinach and Feta Stuffed Portobello Mushrooms serves 2

2 large portobello mushrooms

1 1/2 cups spinach

1/2 cup feta

2 T flax or breadcrumbs

1/4 cup broccoli

2 t olive oil

First preheat oven to 350.  Cut stems off of mushrooms and chop into small pieces.   Heat oil over medium heat, then add spinach, mushroom stems and broccoli.  Cook until spinach is wilted and mushrooms and broccoli are semi-cooked but still crunchy.  Mix spinach mixture with flax or breadcrumbs and add 1/4 cup feta.   Spoon into mushroom cap and then add the remaining feta to the top.   Bake for about 20-25 minutes until feta is starting to brown and mushrooms are cooked through (they will be darker in color once they are cooked).    If you used mini mushrooms, these would make for a great bite size appetizer!

The reason I didn’t use breadcrumbs is because of the whole not eating wheat when possible thing and I don’t have any wheat free bread currently.  Flax turned out to be a pleasant surprise and tasted great, but I think breadcrumbs would be a bit more ‘traditional’.   If you don’t have actual bread crumbs, you can food process a piece of bread and make your own!

Reason why I didn’t post last recipe?  I actually blended the spinach with the other ingredients and it made more of a puree than anything else.  The taste was good, but it’s appearance was a little…um…green:

Random fact of the day:  I double checked how to spell portobello so that I didn’t look dumb and found that it can be spelled portobello or portabella.  Who knew!  Or did you guys already know that?

    And I did not know the spelling fact! we should call tomatoes tomatas. :)
