I’ve tried more than once to make a healthy version of ranch
dressing and this is my personal best (so far).
I think one of the most surprising things about preparing foods that
aren’t processed is that if you want to end up with a taste you are familiar
with; you need to add quite a bit of salt.
Even if you like to eat a minimal amount of salt if you are eating
processed foods, you are getting quite a bit of salt before the salt shaker
heads to your dinner plate. The texture
of the dressing is amazingly good, there’s no modified food starch added to
give it body, it has a very nice body of it’s own!
¼ cup low fat mayonnaise
1/3 cup low fat Greek yogurt
1/3 cup low fat milk
2 teaspoons red wine vinegar
½ teaspoon Dijon mustard
1 teaspoon dried parsley
¼ teaspoon dried dill
½ teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
In medium mixing bowl, combine milk and red wine
vinegar. Mix in yogurt and mayo. Add the remainder of ingredients and mix
well. Add additional salt if desired. If you are a real fan of dill, add a bit more
dill, I sometimes double the amount because I enjoy dill.
