Going Greek

For the past few days I have eaten a lot of greek salads.  Normally, I don’t really like eating the same foods over and over again but sometimes I really get a craving for something  and can enjoy it multiple times in a row.  Plus, after I bought all the ingredients for this salad, I had to use up the produce.  I absolutely HATE wasting food.  I always feel too bad doing it.

For anyone in the Chicago area, I try to get all of my produce at Stanley’s.  It is a fresh fruit/veggies market that is insanely cheap.  They basically stock whatever is in season (for the most part), so  don’t go there with a plan to buy a particular fruit or vegetable, because they don’t always have everything.   Either way they still have a huge selection of stuff and it is so inexpensive you really can’t go wrong.

Moving on from my Stanley’s rant.  The salad contained:

Chicken, spinach, cucumbers, tomato, capers, feta, olives (I used black because thats all I had), beets, dressing made with olive oil, red wine vinegar and a few spices and a little bit of hummus.

The chicken I used is some I actually brought back stole from my parents house. It was  greek yogurt marinated chicken and was the best chicken recipe I have had in quite awhile.

I will make sure to get the recipe posted on the recipe page asap because it is delicious and really easy to make.  Win win!
