Garbonzo bean and green olive salad

 

Today was Food Fresh Share day at work.  Once a month we can order a basket of produce at work.  I missed last month, I was on vacation.  Last time I ordered the large basket, this time I tried the small basket.  I think I’ll go back to the large next month, I should be able use the small basket up in no time.  You don’t know what you are going to get, it’s a surprise!  How fun. Soon the majority of the produce will be Michigan grown, so it’s a great way to support local farmers.

This is so easy to throw together and it’s great for any number of occasions.  I brought it for lunch a couple of days this week.  It would be great for a picnic or a buffet because it is perfect served at room temperature.  Guess what else is great about it?  It is even a vegan dish.  What more can you ask for?  Who knew one little can of garbanzo beans could fill so many needs.  Don’t be afraid to try it, it is surprisingly delicious. 

14 oz. can garbanzo beans, drained

½ cup coarsely chopped pimento stuffed green olives

½ cup diced sweet onion

1/3 cup chopped flat leaf parsley

1 tablespoon olive oil

2 tablespoons lemon juice

¼ teaspoon Dijon mustard

Mix olive oil, lemon juice and mustard together in a medium mixing bowl.  Add all other ingredients to bowl and toss. 

Look what’s just coming into bloom, I just love the smell!
