It’s not too late to find a few locally grown tomatoes. Quick grab some from a neighbor or local farm market and enjoy the last taste of summer before they’re gone. Is there anything better than a locally grown tomato? This vinaigrette really lets the tomatoes delicious flavor shine through. If you keep your tomatoes in the refrigerator, take them out for an hour or so to let them come to room temperature, it really improves their taste. The onion adds a nice crunch and the chives add a nice bit of green color. I think parsley could be substituted for chives if you don’t have any on hand. This is so quick and simple to prepare and the taste is so delicious, you will be pleased.
2 tablespoons olive oil
2 tablespoons red wine vinegar
½ teaspoon Dijon mustard
4 tomatoes, cored and cut into wedges
2 tablespoons onion, finely diced
2 teaspoons chives, finely chopped
Salt and pepper to taste
In small mixing bowl, combine oil, vinegar and mustard. Add tomatoes to serving dish of choice, toss with dressing and garnish with chives and onion. Add salt and pepper if you like. Enjoy! Karen
