I never would have guessed this would be so great. I really love this and this is the healthy version, but try it with sour cream instead of the yogurt and it’s even more amazing. If you are not planning to eat this right away, add the mint as needed and add the mint when you serve it. All the ingredients hold up well except the mint.
4 small cucumbers or 1 English cucumber, unpeeled and diced
½ Vidalia onion or sweet onion, diced
½ cup Greek yogurt
¼ teaspoon garlic powder
2 tablespoons, finely chopped fresh mint
Salt and pepper to taste
