Hi everyone! Happy Wednesday! I’m hoping for a speedy rest of the week. With the weather warming up I am really starting to dread my commute more and more. While I have always disliked it for the most part, sometimes in the freezing cold winter it was nice to be able to get in my car instead of have to walk to the train and then walk to work. Now that it is nice out (for now), I absolutely hate sitting in traffic for an hour to an hour and a half each way when I could be outside enjoying the weather. I think it makes me even more frustrated with traffic than I normally am, which is saying something since I hate traffic and have road rage (not really, but kinda). I also am a back seat driver according to both of my parents. Just a real joy to be in the car with I suppose. On top of normal traffic, I have heard that traffic gets much worse in the summer and not to mention gas prices are out of control. Grr, frustrating. Anyways, I will move on but thanks for letting me rant for a few minutes (not like you really had a choice ).
Tonight I knew I needed to make something with the green beans that I bought a few days ago, but I wasn’t sure what to make. I had a can of crab that my mom gave me (I often stock up on random food from my parents pantry and fridge when I go back home) so I decided to make a crab and green bean salad and it turned out really well!
Crab and Green Bean Salad
1 can of crab (mine is from TJ’s) You could also use fresh if you are so inclined
2 cups green beans
2 T capers
1 pear, diced
1 T veganaise or mayo
1 t dijon mustard
1 T lemon juice
Since the crab was canned, I started out by making the green beans. I blanched them (boil water and put the green beans over the heat just for a moment until they turn bright green). Once they were a bright green color, I turned the heat off and immediately ran cold water into the pan. Then, I used the same pan to saute them for a few minutes with lemon juice and salt. After this is done, just chop the green beans (or if you were smart you would have done that before). Mix the beans with the crab, pear and capers and then make the dressing by combining lemon juice, mustard and mayo as well as salt and pepper to taste. Serve over greens or even as a sandwich.
I kind of just randomly threw things together but it ended up being really tasty salad! The only thing to note for this one is that I added minimal mustard–probably 2 teaspoon’s max and the mustard is kind of overpowering so I changed it to one teaspoon in the recipe above. I think it adds a good taste so don’t leave it out entirely (unless you despise mustard or something), but do watch how much you are adding and mix in more to taste.
