Chopped Salad

This is a really yummy salad and the perfect summer dinner
for a hot night.  I like it equally well
with feta cheese and blue cheese. It’s also a nice salad to make if you have
some left over steak from the grill, you could skip the bacon if you have beef
to add.   When a salad is called a chopped salad it
should mean that all the ingredients are chopped to about the same size.  Ranch dressing works well with this salad.

1 small head romaine salad, chopped

2 Roma tomatoes, chopped

2 stalks celery, chopped

1 can black olives, drained

¾ cup pimento stuffed green olives, drained

2 hard boiled eggs, chopped

2 carrots, peeled and sliced

1 can chick peas, drained (14 to 16oz)

1 medium sweet onion, chopped

¾ cup frozen peas

¾ cup crumbled feta cheese

8 slices bacon, crumbled

1 English cucumber, chopped

¾ cup croutons

1 tablespoon flat leaf parsley, chopped

1 tablespoon chives, chopped
