Are you tired of the same old breakfast menus? Craig likes breakfast food more than I do. So, sometimes if it’s late enough in the morning, I am ready to move on to lunch food even if we haven’t had breakfast yet. This doesn’t happen at home, we seldom have a real breakfast there. I am more likely to make breakfast when we are at the cottage. So, I came up with breakfast pizza to satisfy his interest in breakfast when I was ready for lunch!! The ingredients can vary depending on what you have on hand.
20 oz. bag of frozen or refrigerator hash browns
1 large carton (16 oz) egg beaters
Spaghetti or pizza sauce, 1 cup approx
6 oz. shredded mozzarella cheese
Pepperoni, or cooked bacon or breakfast sausage sliced
Vegetables such as mushrooms, spinach, onion, pepper
Preheat oven to 350.
In large sauté pan, prepare hash browns until crispy with a small amount of vegetable or olive oil. Add enough hash browns to the pan so that when cooked and crispy most of the bottom of the pan has a layer of potato.
Pour egg beaters over hash brown mix, put pan in oven until eggs are just firm, about 5 to 7 minutes. Remove pan from oven and allow to cool for 5 min. After 5 minutes, top eggs with pizza sauce, just enough to cover the egg layer. Top pizza sauce with most of the cheese, reserving several tablespoons for the top. Add vegetables and top with meat of choice followed by reserved cheese. Put entire pan back in the oven until cheese is melted and meat is crisp, about 15 to 20 minutes. Remove from oven and allow to cool for 5 minutes before slicing and serving.
