Best Sandwich of the Summer

I really like to eat and I like fresh ingredients packed with lots of flavor.  Sometimes the very simplest ingredients can deliver the very best taste.  This sandwich is so simple but is amazingly delicious.  I sliced a fresh Michigan tomato, picked some basal from the garden and sliced some fresh mozzarella cheese and combined them with a great loaf of bread and a tiny drizzle of olive oil and I had the most wonderful  sandwich I’ve had in quite a while.  If you have some really delicious olive oil, this is the sandwich to use it on and a little goes along way, not much is needed.

About ½ of a standard sized French baguette (or bread of your choice)

3 ounces fresh mozzarella cheese sliced

1 large tomato, sliced

A handful of fresh basil leaves

1 teaspoon extra virgin olive oil

Slice baguette lengthwise.  Place bread crust side down on a baking sheet.  Place sliced cheese on one half of bread and place under broiler for just a minute or 2 or until the cheese is just beginning to melt on the bread that is topped with cheese and bread is just beginning to brown on half of bread without cheese.  Remove from oven and top cheese with sliced tomatoes and basil leaves.  Drizzle with olive oil and assemble sandwich.  A perfect take along for a picnic.  Hope you enjoy it as much as I did!  Karen
