Another pumpkin recipe…

I know you guys are all checking back on a Friday night for my second pumpkin recipe.

With the never ending can of pumpkin, I really wanted to make something savory and have also been wanting to make some sort of gazpacho.  I love soup except when it is 90 degrees it isn’t really the kind of thing you think about eating, right?  Gazpacho is a different story though.  I have actually never made one before, so this was a total guess on if it was going to work out.

I ended up making a Mint Pumpkin Almond Gazpacho.  OK, that name alone sounds kind of gross.  Does mint really go with pumpkin?  But trust me that it is good. Since I can’t taste things from anyone’s taste buds but my own, I’m not going make any guarantees but I wouldn’t post it if I didn’t think you would really like it.

Cold soup can be kind of…interesting to eat.  When you see a bowl full of soup, you automatically think of it being warm.  But when you take a bite and it is cold, it throws you off a bit.  The combination of flavors are interesting and unique to say the least but I think they do a good job to make a filling, delicious soup…yet one which is also really refreshing, which is a requirement of gazpacho.

Another thing that I love, besides the intriguing taste, is the fact that you literally can throw this together in a matter of minutes.  It doesn’t require any cooking and if you were making for a dinner party, could be put together a day or two in advance—which causes for less stress the day of.

To make, simply combine the following:

½ cup pumpkin

½ cup almonds

½ cup mint leaves (not packed)

1 clove garlic

¾ cup almond milk

Dash of honey

Salt and pepper to taste

Then blend away, and voila!

I even had enough pumpkin after this to still make pumpkin overnight oats.  YUM!  These were the best overnight oats I have had in awhile.  They were just: 1/3 cup oats, 1/3 or so cup pumpkin, 1 T chia seeds, a few drops of honey, 1/4-1/2 cup soymilk, handful of frozen berries.  Stir it all up and put in the fridge overnight!  Then this morning I crumbled a pumpkin cookie on top!

Also…We may not be posting tomorrow because my mom is up north and fingers crossed, I am hoping to go to Lollapalooza.  IF I can get a ticket.  I might try to set something in the AM though.
