I wonder if my roommate ever gets sick of hearing me proclaim ‘Wow, I can’t believe I lived without a food processor for so long!” every. single. time. I use my food processor (which is a lot). I don’t blame you Mer, I’ll try to stop saying it. But honestly, I still can’t believe it! It is so easy to just whip up things you never would have dreamed of making without a food processor and it makes the things you already made so much easier and better! Guacomole, (edamole!), salsa, cookies, chopped veggies, protein bars, you name it! Although I still would like a vitamix for smoothies, sauces, etc. A little too far out of my price range at the moment though.
I thought about this yesterday when my food processor was whirring away and effortlessly making pasta sauce! I got the idea because one of my coworkers was talking about how she was going to make her own pasta sauce with fresh veggies and ground turkey. I guess I never really thought of just whipping up pasta sauce in a food processor and using it right then. My mom makes her own pasta sauce, but cans it so I always thought of it as a longer process (hers is really good though, you should ask her to post the recipe ).
I guess the sauce wasn’t totally homemade because I cheated and used a can of tomato sauce. BUT if you had more tomatoes than I did (one vine ripened + 1/2 pint of grape tomatoes), then you could easily omit the tomato sauce and just use more fresh tomatoes. So, I’m counting it as totally homemade. I started the can of sauce simmering on the stove while I combined 1 whole tomato, 5 baby carrots, 3 mushrooms, a sprig of rosemary, 2 cloves of garlic, a handful of parsley.
The great thing about this sauce is you could easily use whatever vegetables you have. Don’t have mushrooms? Use a pepper! Don’t have parsley? Use basil! Honestly I think anything would work. The thing that I like about it is it tastes sooooo fresh in absolutely no time. Once I had processed this mixture until everything was chopped up (about one minute), I added to the saucepan with the tomato sauce. Before adding to the sauce it was actually a little reminiscent of salsa, so I think you guys can see where I’m going with this one…get ready for a salsa recipe in your near future.
Add some salt to the mixture and stir frequently. You just have to cook it long enough to heat through, only a few minutes. If you are serving immediately, you can start cooking the pasta at the same time or a little before you start to heat the tomato sauce. Once the pasta is ready, dump the tomato sauce on and serve! If you want to make this vegetarian, it is ready to go as is, or you could add some ground chicken, beef, turkey, etc to the mix and that would only add on a few minutes. If you do want to make in advance, the sauce stays good in the fridge for about a week.
The sauce did not explode everywhere, I just had already poured the sauce over my pasta when I took the pic..oops.
